How to Use : Ancient Red Rice (Red Rice Pulao) • Prep time; - 20 mins, • Cooking time; 20 mins, • Portion; - 02 serving • Ingredients ;- 1/2 cup Ancient red rice, 2 cup Water, 2 tsp Oil, 1 medium Onion, finely chopped, 1 small Tomato, finely chopped, 1/4 cup Green Peas (mutter), fresh or frozen, 3 tsp finely chopped French Beans, 1/4 cup finely chopped Carrot, 04 pcs green Chilli sliced Spices 1 small piece of Bay Leaf, 1/2 tsp Red Chilli Powder 1/8 tsp Turmeric Powder, 1 tsp Cumin Seeds, 4 pcs Green Cardamom, 1/4 tsp Garam Masala Powder 1 piece of Cinnamon 2 Cloves 2 tsp finely chopped Coriander Leaves A pinch of nutmeg, Salt to taste, 1 tsp Fresho Signature Ghee • Method ;- 1. Rinse and drain red rice well. 2. Heat ghee and oil together in a pressure cooker on low flame. Add bay leaf, cumin seeds, cinnamon, clove, cardamom, and saute for 30 seconds. 3. Add onion and saute until it turns light brown or for approx. 2 minutes. 4. Add chopped vegetables and stir-fry them till vegetables lose their moisture. Add garam masala and other spice powder and stir fry for approx. 02 minutes 5. Add 1 cup water and simmer vegetables for approx. 04 minutes. 6. Combine red rice with the vegetables. Close the lid and cook over medium flame for 01 whistles. Turn off flame. 7. Let it cool at room temperature. Open the lid carefully and fluff the red rice with a spoon. Serve with raita.
